Kidney Bean Burger



I love warmer weather months. I love the flowers blooming, the sun's rays on my skin, and of course, the delicious springtime food. A classic food for springtime are burgers. And yes even as a vegan I love eating some (vegan) type of burger in the warmer months.


I know there are a lot of vegan burgers you could buy at the stores, but making your own is the best. And you will know exactly what’s in the veggie burger!


Don’t worry if this if your first time making one I have an easy, foolproof recipe for you.


Here is one of my favorite easy bean burger recipes:


 

Easy Kidney Bean Burger


Ingredients: 1 Tbs ground flaxseed

2 ½ tbs water

1 medium carrot

⅓ cups oats

1 14 ounce can of kidney beans, drained and rinsed

1 cup of mushrooms

½ white onion

1 green pepper

1 tsp garlic


Directions:

Combine ground flaxseed with water and whisk together. Put aside for 15 minutes.

Cut carrots into large chunks. Then place carrot chunks into food processor or high speed blender and process until grated.

Add oats, kidney beans, mushrooms, white onion, green pepper, and garlic. Pulse until ingredients are will combine and sticking together.

Add flaxegg and stir into mixture.

Chill bean mixture in the fridge for 30 minutes.

Preheat oven to 400 degree F.

Form bean mixture into 6 patties and place on a lined pan.

Cook for 30 minutes on one side.

Take out bean burgers from oven and flip them to their other side. Cook in the oven again for an additional 20 minutes.
