Better than Tuna Chickpea Sandwich

The one food I will always been in the mood for when every someone suggest it is a sandwich. What can I say besides I love them. In reality the are the perfect food: they are fast to make, can be customized, and are extremely affordable.
When I decided to go vegan that was one of the only foods that I missed. I enjoyed being able to make something in five minutes and bring on the go when I was busy. Of course I can still make a sandwich, but when you’re just eating one made of lettuce, tomatoes, and cucumbers it can get boring fast.
I knew to keep my love of sandwiches going I had to start making them with more fulfilling (and definitely with more protein). So I did what any vegan would do and turn to beans, chickpeas to be exact. I already enjoyed chickpeas in hummus so I knew it would be a perfect fit.
Below is my favorite chickpea sandwich recipe that I have. I typically make this every other week and have it for multiple meals. If you end up making it comment below what you think. Also comment below another vegan sandwiches you love too!
Chickpea Sandwich

Ingredients:
1 can ( oz) of Chickpeas
1 carrot
2 celery stocks
¼ of a Red Onion
3 Tbs of Vegan Mayonnaise
1 Tbs of Chopped Chives
1 Tbs of Bay Leaves
1 Tbs of Mustard
2 Tsp of Garlic Powder
Ground Pepper to taste
Directions:
Chop and cut the celery, carrot, and onion.
In an bowl place washed chickpeas and mask with a masher for 2-3 minutes. Remember when you are mashing the chickpeas to leave some of the beans as it. You are not making hummus and the full pieces of chickpeas leaves a great texture.
Add the chopped veggies and the remaining ingredients to the bowl. Mix together until everything is combined.
Serve on wholegrain bead or as wrap with lettuce and tomatoes, or put it inside a pepper!
